The laws in Poland say the following:
Every person who has a driving license issued abroad and has been living in Poland for at least 185 days must exchange it for a Polish driving license. A foreign driving license ceases to be valid 6 months after obtaining permanent or temporary residence in Poland. This also applies to UK driving licenses issued after 31 December 2020.

It means that:
1. As a holder of a driving license from Australia, you can drive in Poland without an International Driving Permit.
2. However, according to the rules in Poland, if you have been living in the country for at least 185 days, you must exchange your foreign driving license for a Polish driving license. Therefore, you will eventually need to obtain a Polish driving license.
Different rental agencies might still require an IDP even while the local laws do not require it. Please find your appropriate local supplier in the list above to verify.
