The laws in Greece say the following:
Since you do not have your normal residence in Greece and that state is not a party to the Vienna Convention, in order to drive in Greece, you are required to hold a valid international driving license. The international driver's license, in order to be valid, is required to be accompanied by the valid national driver's license.

It means that:
1. As a holder of a driving license from Australia, you can drive in Greece without an International Driving Permit.
2. However, you will need to obtain an International Driving Permit in order to drive in Greece.
Different rental agencies might still require an IDP even while the local laws do not require it. Please find your appropriate local supplier in the list above to verify.
